The iPad client, like all other Evernote clients, is simple in its UI and easy to navigate. The dev-team also posted a video that explains how it works. Yet another reason why you may want to buy an iPad!
The new features in Email note taking is long-awaited features. Now, you can specify where (which notebook) to save your mailed notes and under which tags. To specify a notebook while adding a note via mails, just put @[notebook-name]
